Chicken enchiladas are a delicious Mexican dish made with tortillas filled with seasoned chicken, cheese, and other ingredients, then covered in a flavorful enchilada sauce and baked until bubbly. Here's a basic recipe for chicken enchiladas:

Ingredients:


For the Filling:

- 2 cups cooked chicken (shredded or diced)

- 1 cup shredded cheese (typically Monterey Jack or cheddar)

- 1/2 cup diced onion

- 1/2 cup diced bell pepper (optional)

- 1 can (15 ounces) black beans, drained and rinsed (optional)

- 1 teaspoon chili powder

- 1/2 teaspoon cumin

- Salt and pepper to taste


For the Enchilada Sauce:

- 2 cups red enchilada sauce (store-bought or homemade)


For Assembly:

- 8-10 small flour or corn tortillas

- Additional shredded cheese for topping

- Chopped fresh cilantro for garnish (optional)


Instructions:


1. Preheat your oven to 350°F (175°C).


2. In a large skillet, sauté the diced onion and bell pepper (if using) in a little oil over medium heat until they become tender, about 3-4 minutes.


3. Add the cooked chicken, black beans (if using), chili powder, cumin, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2-3 minutes. Remove from heat.


4. Warm the tortillas briefly in a microwave or on a hot griddle to make them more pliable.


5. Pour about 1/2 cup of enchilada sauce into the bottom of a baking dish to prevent sticking.


6. Place a portion of the chicken filling and a sprinkle of shredded cheese onto each tortilla, then roll them up tightly and place them seam-side down in the baking dish.


7. Pour the remaining enchilada sauce over the rolled tortillas, making sure they are evenly coated.


8. Sprinkle additional shredded cheese on top of the enchiladas for a cheesy crust.


9. Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.


10. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden brown.


11. Garnish with chopped cilantro if desired.


12. Serve the chicken enchiladas hot with your favorite toppings such as sour cream, guacamole, or salsa.
