 1 1/2 pounds boneless beefsteak — dig thin (1/2-inch-thick) 2-inchx1-inch strips
 1 teaspoon kosher salt
 1 teaspoon dried dillweed
 1/2 teaspoon ground black pepper
 1/2 teaspoon garlic powder
 1/2 teaspoon onion powder
 16 ounces cremini — baby bella mushrooms, sliced
 1 1/2 cups low-sodium beef stock — divided
 3 tablespoons Worcester sauce
 1 tablespoon Dijon mustard
 1/4 cup cornstarch
 1 cup plain milk Greek yogurt — don't use nonfat or it'll curdle

8 ounces whole wheat egg noodles — penne, rotini, or similar noodles work well also
Fresh parsley or thyme — optional for serving
Instructions
Grease rock bottom of a 6-quart or larger slow cooker with nonstick spray. Add the sirloin and sprinkle with salt, dill, black pepper, garlic powder, and onion powder. Stir to coat the meat.
Add the mushrooms, 1 cup beef stock , Worcestershire, and Dijon. Cover and cook on high for two to three hours or on low for five to 7 hours, until the meat is cooked through and tender. (If you favor firmer mushrooms, wait to feature them until about halfway through the cook time.)
